Ingredients:

  • Rice paper wrappers
  • Shredded lettuce
  • Julienned carrots
  • Sliced cucumbers
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Cooked shrimp, sliced in half lengthwise
  • Cooked chicken breast, shredded
  • Rice vermicelli noodles, cooked according to package instructions
  • Hoisin sauce, for dipping (optional)
  • Peanut sauce, for dipping (optional)

Instructions:

  1. Prepare all the filling ingredients and arrange them in separate bowls.
  2. Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens.
  3. Carefully transfer the softened rice paper wrapper onto a clean, damp kitchen towel or a plate.
  4. Arrange a small portion of each filling ingredient horizontally across the lower third of the rice paper wrapper, leaving space on the sides.
  5. Fold the bottom edge of the rice paper wrapper over the fillings, then fold in the sides, and roll tightly to enclose the fillings.
  6. Repeat with the remaining ingredients.
  7. Serve the rice paper rolls immediately with hoisin sauce or peanut sauce for dipping.
