Prep time: 15 minutes | Cooking time: 40 minutes | Total time: 55 minutes

Ingredients:

  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the rice, reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until softened.
  4. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  5. Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they release their moisture and become golden brown, about 5-7 minutes.
  6. Stir in the dried thyme, dried rosemary, salt, and pepper.
  7. In a large mixing bowl, combine the cooked rice, sautéed mushrooms, heavy cream, and grated Parmesan cheese. Mix until well combined.
  8. Transfer the mixture to the prepared baking dish and spread it out evenly.
  9. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
  10. Garnish with fresh parsley before serving.
