How to prepare Spicy Asian Cucumber Salad

The first time I heard the name cucumber salad,, I was like gosh. but I tell u what its a recipe u need to try. its a bum bum!! smashing the cucumber is essential to the making and eating experience.

Ingredients

  • Cucumbers (English or Persian cucumbers work well)
  • Red chili flakes or fresh red chilies (adjust according to your spice preference)
  • Garlic, minced
  • Soy sauce or tamari
  • Rice vinegar
  • Sesame oil
  • Sugar
  • Salt

Prepare the Dressing

In a small bowl, mix together minced garlic, soy sauce, rice vinegar, sesame oil, sugar, salt, and red chili flakes or fresh chilies. Adjust the seasoning to taste.

Prepare the Cucumbers

Wash and dry the cucumbers. If using English cucumbers, you can leave the skin on. If using Persian cucumbers, you may peel them if desired. Slice the cucumbers thinly using a knife and smash.

Combine

Place the sliced cucumbers in a mixing bowl and pour the prepared dressing over them. Toss well to coat the cucumbers evenly with the dressing.

Chilling Time

Cover the bowl with plastic wrap or a lid and refrigerate the salad for at least 30 minutes to allow the flavors to meld.

Tips to Serve

Once chilled, give the salad a final toss and garnish with sesame seeds, chopped green onions, or cilantro if desired. Serve cold as a refreshing side dish or appetizer.
