Prep time: 30 minutes | Cooking time: 25-30 minutes | Total time: 55-60 minutes

Ingredients:

Bun Dough:

  • 1 cup warmed milk
  • 2 tbsp runny honey
  • 2 tsp instant dried yeast
  • 4 cups high-grade white flour (500g)
  • ½ tsp salt
  • 2 free-range eggs, lightly beaten
  • 1 tsp vanilla extract
  • 7 tbsp butter, softened but not melted (100g)

Filling:

  • 7 tbsp butter, softened (100g)
  • ¼ cup firmly packed brown sugar
  • ¼ cup caster sugar
  • 2 tsp ground cinnamon

Icing:

  • 1/3 cup blueberries (fresh or frozen)
  • 1 cup icing sugar
  • 2 tsp honey
  • 1 tsp lemon juice

Instructions:

Bun Dough:

  1. In a jug, combine warmed milk, runny honey, and instant dried yeast. Stir until well mixed.
  2. In the bowl of a stand mixer fitted with a dough hook, combine flour and salt. Gradually pour in the milk mixture, add the beaten eggs and vanilla extract, and mix until a soft, wet dough forms.
  3. Add the softened butter, a quarter at a time, while mixing on medium speed. Knead the dough for 6-8 minutes until it becomes smooth and elastic, yet slightly sticky.
  4. Transfer the dough to a lightly oiled bowl, cover it with cling film, and let it rise in a warm place for 1-2 hours until doubled in size. Alternatively, refrigerate the dough overnight and allow it to come to room temperature before continuing.

Filling:

  1. In a small bowl, stir together softened butter, brown sugar, caster sugar, and ground cinnamon until a soft paste forms.
  2. Line a 23 x 33cm low-sided oven pan with baking paper.
  3. On a lightly floured surface, roll out the dough into a 40 x 30cm rectangle.
  4. Spread the filling evenly over the dough. Roll the dough into a log starting from one long edge, and seal the final seam by pinching it.
  5. Cut the log into 12 even pieces and place them, cut side upwards, in the prepared oven pan. Cover with a tea towel and set aside for 15-20 minutes while preheating the oven to 190°C.
  6. Bake for 25-30 minutes until the buns are puffed and golden brown.

Icing:

  1. In a mini blender, puree blueberries, icing sugar, honey, and lemon juice until smooth.
  2. Drizzle the warm buns with the icing and serve.

How to Serve:

Serve the blueberry honey buns warm, allowing the delightful aroma to entice your senses. These buns are best enjoyed fresh out of the oven, accompanied by your favorite hot beverage.
